Overclocking
Even with water-cooling, you'll likely need to de-lid a Core i7-7700K to be able to get much above 5GHz, and even pushing our CPU to 1.4V didn't allow us to get above our usual 5GHz, while going any higher saw the temperature quickly approach 100°C. Our custom liquid-cooling gear includes a Phobya DC12-220 pump and 240mm radiator. At 5GHz, we could drop the vcore to 1.34V, which is an excellent result, although still not as low as the Gigabyte Z270N-Gaming 5, which needed just 1.3V.
EFI and Software
